Questioner: Jaco
If married to a Thai I would be able to travel to Thailand under the current rules on a Non-Immigrant O visa, single entry. My question is can I convert that visa to a Non-Immigrant Visa Category “ED” (Education) after 90 days?

Normally not possible. But why would you convert that? As a married person you can also study.
Request a year extension as “Thai Marriage”.
