I booked a ticket from December 23rd to February 12th. Now I still have to apply for a tourist visa for 60 days, but because I can only arrange that online at the embassy at the end of November and then I might be too late, I thought I might extend it in Thailand (Jomtien).

But can I leave my ticket on February 12, or do I have to change the departure date to a month? And then change to Thailand? I fly with KLM so I can change it free of charge.

I think you will still get that Tourist visa if you leave on December 23. But if you were to leave with Visa Exemption, it is better to set your return flight to 30 days and later change it again to the desired departure date. This way you avoid questions and it is free you say, so why not use that option.
