I arrive in BKK on 29/03/2023 and depart back on 11/05/2023. Can I use a 60-day visa that I would apply for in February 2023? By this I mean can I have my 60 days visa connected from 11/05/2023?

I had to let your question sink in because why would you need a visa if you leave on May 11? What else do you need a visa for? You are then gone. Does not make any sense.

I think you actually mean the following.

You want to arrive on March 29 and that on “Visa Exemption”. This will give you 45 days first. On May 11, you want to make a “border run” and come back with a “Tourist visa” that you will apply for in February to obtain 60 days.

Please note that your Tourist visa has a validity period of 3 months. After that it is no longer valid.

I would therefore not apply too early but wait until the beginning of March or so if you want to enter in May

This is normal, but of course you should not show your visa at immigration when you enter on March 29, otherwise they will use that visa.
