I want to enter Thailand with a 30-day visa-free entry. Extend this by 30 days, apply within these 30 days for conversion to Non-Immigrant O. Do I also need $ 50.000 insurance with this conversion?

The minimum $50.000 requirement is for a Thailand Pass. You will always need it even if you leave with Visa Exemption.
No insurance is currently required for converting from Visa Exemption to Non-immigrant.
