Since it is currently not possible to apply for a visa for a stay longer than 30 days at the Thai Embassy in The Hague, I want to do this in Thailand myself.
Within what period after arrival is this possible, after a few days, after 1 week or only after 2 weeks?

In principle, this is possible throughout the entire period, but of course before your 30 days have passed.
The question is when immigration will allow it and that depends on the IO. Some will allow it immediately, others will say, for example, to come back in the last week of your stay.
In itself it does not matter because each extension is subsequent to the previous period of stay, at whatever time the application is submitted or granted.
