I am in Thailand for a month. Would actually like to stay a few weeks longer. The period of one month is indicated on the Thailand Pass. The insurance for mentioning 50.000 euros has also been taken out for that period.

Would I be able to get a visa at Immigration for the extended period now? And also have to take out extended insurance?

This means that you have entered on a Visa exemption and have thus obtained 30 days. You can extend those 30 days at any immigration office once by 30 days. Costs 1900 Baht

Doesn't matter what is on your Thai Pass and health insurance is not a requirement.
