I have a question about how to increase the chances of applying for a visa if there is uncertainty because no employer's statement will be issued.
My girlfriend and I are preparing for a Schengen visa. Now a very important issue for those who assess visa applications is the likelihood that the person applying for the visa will also return to Thailand. Proof of an employment contract showing that work is a reason for return then counts very heavily. Now my girlfriend's employer is not cooperating and she will have to resign in order to go to the Netherlands. She probably won't have another job yet. She also does not own a house or land. She can, however, prove that she transfers money to her mother and daughter every month and that her daughter lives and studies with her.
Does anyone have a tip on how we can increase our chances of getting a visa given the above?

It sounds like you don't have many options. It would be nice if your girlfriend could show that she will be working somewhere after she returns. Or try to show that she works in an industry where she can probably find a job fairly quickly once she returns to Thailand (with proof of her current job that is coming to an end). Evidence that she now financially supports her mother and daughter does not help much, the decision official could reason that a malicious applicant could once work illegally in the Netherlands in order to transfer money to her family. Demonstrating that her daughter still lives with her is more concrete evidence to show “look, I am really going back to Thailand because my daughter lives with me and she cannot yet stand on her own two feet”.
In addition, it would be nice if she has been on holiday to a (Western) country before, because if she has returned to Thailand on time before, it is more likely that she will do so again. What can also help is to demonstrate that your relationship has been going on for some time and is serious, and it would of course be very stupid to spoil your future plans by something like illegal residence.
I can't think of much more than what I already write in the Schengen file: the overall picture must be correct (the application must be “simply logical and normal”). One can also obtain a visa “in between jobs” if the further story does not raise any red flags. In fact, few people can get 2-3 months off from work, so after quitting an employer, taking the opportunity to go on holiday to Europe for that long should not be strange if everything is fine financially (both paying for the holiday to cover the costs until a new job is started).
A good covering letter from her/you that clearly describes the situation and the realization that she will have to return in time to meet social/financial obligations and not to jeopardize any future visits to you. So don't come up with some vague story, but show that you clearly know what you are doing. In short, an honest and realistic story.
