We have a retirement visa that expires on February 7. Initially this ran from July to July. This has shifted due to the covid. However, we will be in Thailand on February 7. We have not reserved the required amount in the bank in Thailand, but we do have sufficient income in the Netherlands. We will leave again in September and applying for a visa in advance in the Netherlands is not possible. The embassy in The Hague says that you can only apply just before the expiry date.

How can I provide proof in Thailand that we have sufficient income to legally apply for a new annual visa at immigration?

If you have sufficient income, a visa support letter will suffice. You can obtain this at the Dutch embassy in Bangkok.
