Here is my question: I am staying in Pattaya and have a 1 entry tourist visa. On March 5th it will be my 60th day in Pattaya and since I am supposed to stay until April 2nd I will have to go to the immigration office in Pattaya for the extension of 30 days.
Will my application be completed on the same day or will it take longer to process?
In other words: Will I be on time if I go to the immigration office on March 5 (= the 60th day) or do I have to hand in the necessary copies 1 or more days earlier and then go to the office again on March 5 to collect all the papers?

An extension of a Tourist Visa is done on the same day. The procedure itself does not take that long. Of course it may take a while before it is your turn. This depends on how many people are already there before you.
However, I recommend not waiting until the last day. You never know what might happen on that (last) day. Maybe you just don't feel well that day, or you have lost track of a closing day, or whatever... Waiting until the last day also makes no difference to the duration and end date of the renewal. The 30 days are always following your last day of stay, which is stated in your passport.
You can therefore ask for your extension a few days in advance, you will not lose a day if that is your concern. In addition, you then have a few spare days if you are suddenly unable to attend that day. You should not go much earlier, because then there is a chance that you will be sent back because you are too early.
