On 14-11-2014 I fly into Thailand. And on 21-12-2014 I leave again. This would mean that I stay longer than 30 days. And then I would have to make a visa run.

I wanted to do that on the 8th 0f 9th of December via the Chong Chom checkpoint (go straight to the Chong Chom market 😀 ) But I've done this before this year. On 03-05-2014. Now my question is whether that won't cause problems, because they might see it as a long stay?

This will not be seen as a long stay. After all, your previous visa run was in May. There are therefore no multiple consecutive visa runs to suggest a long stay.
Keep in mind that you will only receive 15 days by land.

If you really want to go to that market, it may be a reason, but in your case it is no longer necessary to make a visa run. You entered on “visa exemption”. Since the end of August you can also extend a “visa exemption” once at immigration for a period of 30 days. Cost 1900 Baht.
