Khao Soi (ข้าวซอย) is a popular dish in Northern Thailand, especially Chiang Mai. It is a rich, flavorful soup that consists of a combination of deep curry flavors, coconut milk, and usually chicken or beef. This soup is served with soft wheat noodles in the soup and crispy fried noodles on top. It is often accompanied by a variety of side dishes such as pickled vegetables, shallots, lime, and ground chili peppers in oil, allowing eaters to customize the soup to their own taste. Khao Soi is known for its unique blend of flavors and textures, making it a beloved and distinctive dish in Thai cuisine.

Ingredients (1 person)

  • ½ vegetable stock cube
  • 1 tsp tomato ketchup
  • 1 full tsp curry powder
  • 1 tsp coconut cream
  • 2 cm fresh ginger root (very finely grated or thinly sliced)
  • 1 tsp cornflour (mixed with a splash of cold water)
  • 1 package of dried noodles (150 g)
  • ¼ red bell pepper (thinly sliced)
  • 2 tbsp (frozen) green peas
  • 1 handful of fresh leaf spinach
  • 4 cooked, peeled jumbo shrimp (halved)
  • 1 handful of fresh coriander leaves
  • 1 wedge of lemon

1. Following the above order, first place the basic ingredients in a heat-resistant 1 liter pitcher, cup or bowl, layer the noodles, vegetables and prawns on top, then pour in 400ml of boiling water.

2. Stir everything together, then cover the soup with plastic wrap and let it sit for a few minutes to let the flavors meld, let the noodles swell, and bring this pimped noodle soup to the perfect temperature.

3. If you prefer to eat it piping hot, microwave it for another 2 minutes. Add salt and pepper to taste, finish the soup with the coriander leaves and a lemon wedge, and eat!
