When you think of street food in Thailand, you definitely think of noodle soup. A large part of the street food peddlers sell the world famous noodle soup. There are many different noodle soups, so we make a choice. We definitely recommend Kuay teow reua or boat noodles (ก๋วยเตี๋ยว เรือ).

Kuay tiew rue is a popular noodle soup from Thailand. "Kuay tiew" means "rice noodles" in Thai, while "rue" refers to the "on the street" style of this soup. It is one of the most common dishes in Thailand and is usually sold by street vendors and small food stalls.

The soup is made by boiling rice noodles in a broth of meat (usually pork or beef), which is seasoned with various herbs and spices. In addition to the noodles, the soup often contains other ingredients such as meatballs, pork, pig's blood, fish balls, vegetables and spices such as coriander and spring onion.

One of the things that make kuay tiew rue so special is that it comes with different side dishes and seasonings. This may include fresh chillies, lime wedges, fish sauce and sugar, which can be added to adjust the flavor of the soup according to personal preferences.

For those of you who have never eaten Kuay tiew rue, it's time to try one of the tastiest – and really cheap – street food. The dish is so popular that you have an entire street of boat noodle restaurants at the Victory Monument in Bangkok.

Kuay teow reua is a Thai style meal soup, with quite a strong taste. It contains both pork and beef, as well as dark soy sauce, pickled bean curd and some other condiments, and is normally served with meatballs and pork liver. The soup also contains lueat mu sot or lueat nuea sot (เลือดหมูสด, เลือดเนื้อสด), which is pig's or cow's blood mixed with salt and spices, to flavor the soup. The dish is usually served in a small bowl.

The other ingredients of boat noodles are garlic, radish, cinnamon, bean sprouts, parsley, morning glory and some Thai chilli flakes. The noodles used for the boat noodles are diverse: thin rice noodles, egg noodles, sen yai and sen lek. Boat noodles are often served with sweet basil.
