Dressing for the shrimps:

  • 2 tablespoons vegetable oil
  • 2 teaspoons of chopped garlic

  • 1/2 teaspoon dry orange peel
  • 1/2 teaspoon smoked paprika
  • 1 / 2 teaspoon garlic powder
  • 1/2 cup (loosely packed) fresh chopped cilantro leaves

Mix the oil with the garlic, sesame seeds, orange zest, paprika, garlic powder and coriander in a large bowl. Add shrimp and spread the dressing over the shrimp. Let the shrimp sit at room temperature for 10-15 minutes to marinate them.

The sauce:

  • 1 clove garlic, coarsely chopped
  • 2 tablespoons (loosely packed) fresh coriander leaves
  • 1/2 to 1 Thai chiles (or less)
  • 6 tablespoons of fresh lime juice
  • 4 tablespoons water
  • a pinch of salt
  • 2 tablespoons granulated sugar

Place all sauce ingredients in a blender and blend together until cilantro is finely chopped (about 30 seconds to 1 minute).

Variation Goong Pao in the wok (recipe)

Goong Pao roasted shrimp and peanuts in a spicy sweet sauce. This is how you can make it:

Ingredients:

  • 250 grams shrimps, unpeeled
  • 1 tablespoon oil
  • 1 tablespoon dried chili peppers
  • 1 teaspoon ginger, grated
  • 1 tablespoon garlic, minced
  • 1 tablespoon peanuts, toasted and chopped
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of soy sauce
  • 1 tablespoon of white wine
  • 1 tablespoon of sugar
  • 2 tablespoons mixed vegetables (e.g. bell pepper, onion, tomato, zucchini), diced
  • 1 tablespoon coriander, finely chopped

Preparation method:

  1. Heat the oil in a wok or frying pan. Add the chillies, ginger and garlic and cook for 30 seconds.
  2. Add the shrimp and cook until pink.
  3. Add the peanuts, sesame seeds, soy sauce, white wine and sugar and stir well.
  4. Add the vegetables and fry until tender.
  5. Add the coriander and stir well.
  6. Serve the dish warm with rice or noodles.
