Thailand Visa question No. 338/22: Tourist visa

We (couple age 78 years) want to go to Chiangmai on October 6, 2022 for 3 months. Before the Corona era, we have done this many times with a Non Immigrant O visa, which we obtained without any problems at the Thai embassy in The Hague.
Applications now have to be arranged through e-visa with stricter conditions. Encountering the following (for me) absurd problem. The following conditions are set for the necessary documents for the insurance statement:
“Health Insurance statement confirming coverage for the entire period of your intended stay in Thailand which explicitly mention:
Outpatient benefit with a sum assured not less than 40,000 THB or 1,300 EUR
Inpatient benefit with a sum assured of not less than 400,000 THB or 13,000 EUR
cover all medical expenditures including COVID-19 for at least 100,000 USD”
I have had comprehensive travel insurance with Allianz for years and they issue the following standard statement:
Validity: 12 months, with a maximum period of traveling of 180 days for each trip.
Geographical area of Insurance cover: World
We hereby confirm that the person named above has Travel Insurance for:
• medical costs that cover all emergency health care, including health care related to the Covid-19
virus, up to $100.000. Only if not covered by a health insurance policy and if the above mentioned
insured person has not traveled against government advice.
In our opinion, this statement amply covers the conditions of the embassy. However, it is not accepted by the embassy because they demand the literal text as stated in their conditions. Allianz in turn refuses to deviate from its standard text. The weak argument is that thousands of customers have been helped in this way (think that they are referring to the situation with Thailand Pass).
Extra insurance through Thai insurance, partly due to our age, comes to about 400 euros per person per month.
Our question: do you recognize the problem outlined above and what solutions are possible?
Personally, I am thinking of a tourist visa for 60 days with an extension of 30 days via Immigration Chiangmai. What problems might I run into?

The problem of insurance has been covered more than enough in other articles. Just search through the search function.
But you yourself provide a solution that you can apply and that is applying for a Tourist visa. You get 60 days that you can extend by 30 days (1900 Baht). That's how you get your 90 days. I don't see what problem you might have with the application. Actually, it largely corresponds to a Non-immigrant O but without insurance requirement.
