Skinning chicken feet with the teeth

A factory in northeastern Nong Khai province had some explaining to do after a video went viral showing workers using their mouths to extract the skin from chicken feet. The skin of chicken feet (called 'leb mue nang' in Thai) is a delicacy for many Thais. It is often used in spicy salad dishes.

The video shows workers picking up chicken feet and using their teeth to separate the skin from the bone before spitting it into a bath, all done very quickly.

Last week, the Nong Kai business was visited by the provincial governor, authorities from the Nong Khai Provincial Public Health Bureau and other officials for an inspection. Officials tested the product for contamination and hazardous chemicals and the results came back negative. The production method was rejected.

The 31-year-old factory owner Nonglak told authorities she has been processing chicken feet for 5 years. The chicken feet are bought in bulk and 400-500 kilos of the skins are sold to customers every day.

Nong says the factory initially used tongs, but it took about 5 minutes to skin one chicken foot and customers didn't want the product because the skin was mutilated and unappealing. She found that allowing workers to use their mouths to skin the feet worked 5 times faster and produced a better product.

Since the video went viral, Nonglak has pledged to retrain its employees to use the pliers again. Other factories have also been warned and are also switching to pliers. Nonglak has temporarily closed her factory until her staff can master the use of the pliers. She also revealed that employees receive regular dental care

    Well, if that's all that's wrong...... Those things go into the freezer and only arrive on your plate after cooking or frying. I think in Thailand there is also something to note about hormones and chlorinated chickens and more, and about what we eat in the western world, full of all those super healthy E additives…..

    Anyway, the staff can go to the dentist at their expense. That is deserved anyway.
