I want to smoke fish and meat. Which wood is suitable in Thailand?

    All wood from fruit trees is suitable. It's a matter of trying out which one gives you the best taste. Especially catfish tastes excellent. Good luck.

    Is there a way to smoke meat or fish that doesn't leave carcinogens in the meat or fish? It is better to ask the Consumers' Association or PO Box 51 for information about this first.

      But do you know that smoking food is carcinogenic? Those substances that promote this remain in the meat or fish.

    I do too, given the small amount of wood chips you need, my advice is to buy these pre-packaged at global house or home pro, various flavors available in bags of about 500 gr. in the bbq department.
    More than enough to smoke a whole pig.

    Smoke them and enjoy your meal.

    I didn't know that PO Box 51 (if it still exists) knows which farmers in Thailand have grown their trees in an environmentally friendly way, so that you can safely use them for smoking. That seems stiff to me!! It is even claimed that the rice in Thailand is full of pesticide. Of course that contradicts everyone. So tasty food.

    In any case, do not use tropical hardwood.
    That stinks and I don't think it's recommended.

    Joost, I also smoke fruit wood, which is very good, especially that of mango, but I use a lot to dry the crack of the coconut, but that is not a problem in Thailand. You can get it anywhere just look for it. If you then smoke small pieces of wood from an emer of water that has been soaking for a day between the glowing coconut crack, good and going well.
    Just before I went back to work I smoked neither praduk ( catfish ) very tasty is just like eel . Chicken is also nice to smoke.

    My wife smokes the mackerel with rice sheaves. An oil barrel with bottom and top knocked away, put the rice sheaves in the bottom {obviously}, wet it a little and put the mackerel on top on a grid.Delicious!.

    1 oil drum just leave a slide at the bottom or make it yourself.
    Drill some holes opposite each other at the top so that you can put 6 mm stainless steel pins through them and you have a smoking barrel for less than 1000 Thb
    Sliding door makes it easy to regulate the temperature.
    Stick the pins under the gills through the head and against falling into the fire also attach a piece of iron wire around the head to the pin for support.
    Hang a wet jute bag over the barrel so that the smoke remains in the barrel.
    Have fun with it.
    This way you can also spoil the neighbors cheaply if they are bothered by the smoke.
