I read on Thailand blog that life in Thailand is getting more and more expensive, also because the baht is so strong. But what about hotel prices? We want to fly to Thailand in March. I could always book a good hotel room (3-star) for about € 25 per night. Will that still work?

I think it will work if you look for hotels that do not cost more than 800 Baht. However, if you paid 25 Euro per night last year, you will now soon be at 30 Euro.
Recently I no longer book hotels, but I do look for location and drive there at random. Then I check in on the spot and often get a substantial discount on the price of an Agoda or Booking.com.
Too often we have traveled to a booked hotel full of expectations and found that the hotel or the area was disappointing. This aside….

it largely depends in which place you want to spend the night and what requirements you set for the accommodation 😉
Cheaper accommodations are easier to find on Agoda than on Booking.com.

I would say just do it. So book an overnight stay in advance and then look for another place to sleep, because outside the high season there is a lot of empty space and I think you have a good negotiating position to negotiate a favorable price if necessary because there are still plenty of cheap hotels to be found .

That won't be a problem because after March the high season is over and prices drop. Moreover, with a little searching, you can find an overnight stay throughout Thailand for approx Th Bth 800/1000. But also for 600!
I just checked into a beautiful hotel in the province for 900 baht/night (€30), also paid the same on the southern island of Koh Muk.
A nice alternative is to consider neighboring countries such as Myanmar, Cambodia and Laos. Vietnam is also an option but has a different culture. Myanmar has the reputation of becoming more expensive, but it turned out better than expected: many people fear the Rohinga crisis. Wrongly because it is a huge country and that area is easy to avoid.

Come on people. Also on Phuket are still rooms for 500 baht with air conditioning. If you want the more luxury you want, the more you pay, it is that simple. But despite the strong baht, Thailand is still cheap to have a wonderful holiday.
Just look on a booking site like agoda, expedia or booking.com. Then you can see what is possible for what budget and wishes. Asking a general, otherwise unspecified question here doesn't make much sense. It also strongly depends on the wishes / requirements you have. Find a hotel for 25 euros. Certainly. I booked a 5 star condo for 3 weeks in early February in jomtien beach pattaya via airbnd for 20 nights 13 euros per night at booking.com you pay more than 570 euros for the same condo The orient&Spa resort.
I arranged a hotel in Pattaya on the beach road soi 2 in 8 weeks for 460 baht / night. So less than 14 euros per night. Only a 2 star hotel, but with a good bed, good bathroom, balcony and a swimming pool. I've been there 2 times before. For me it works fine. Because of the live music in the area, it is better not to go to sleep before 3 am. But that's not a problem for me either.

If you look too cheap in price, you may have bugs in your room. See traveler reviews on booking.com or similar. You have to count on a 1.500 Baht = 45 € for one night, breakfast included.
Sorry but this is big bullshit
I've had trouble with cockroaches in the room and insects in the lettuce in a 5 star hotel.
This in a kings royall hotel from 400 GBP per night/.
When we are traveling around Thailand I always look for a hotel locally with trivago or google maps and always search otherwise my wife gets angry for less than 800 bath and my wife thinks that is still too expensive.
Search on Trivago and find the location with google maps. Look on site and then negotiate the price. Often 10 to 20% cheaper than yourself in any site.
If you first look cooked on the spot, you SEE what you get. In 8 years we ran away from a hotel or resort together once and went to sleep at the second choice.
ALSO and that might be an idea try to spend the night at a HOMESTAY. Sometimes VERY pleasant surprises and certainly NOT negative.

Been coming here for years and have done several people places. From north to south and from east to west.
There is a difference in region and the time of stay. Often I just ask the taxi driver. They often know a friend or family who rents out accommodation and or receive a precent. I prefer to go with the locals. Have fun and pay really little for a stay with the necessary basics such as air conditioning and hot water. Enjoy the hospitality of the country and experience a real holiday

Including breakfast 525 bath per night.

Of course everything depends on season environment. Bangkok pathunwan Is more expensive. Glow hotel 80 euros, fantastic Sukhumvit Is cheaper. Been in November ... We still paid 75 Euro 1 night breakfast included 3 people. Separate bedrooms.
