Thai cuisine is proof that fast food (street food) can also be tasty and healthy. With a wok and some basic ingredients you can vary endlessly. In this video you can see the preparation of Pad Prik Gaeng: Pork (or chicken) with beans and red curry.

Pad Prik Gaeng, also known as stir-fried red curry, is a classic dish from Thai cuisine. The origins of this dish lie in Thailand, where the use of spicy curries is an essential part of the culinary tradition. Thai cuisine is known for its rich and complex flavors, which result from a blend of local ingredients and influences from neighboring countries and trade routes.

Historically, curry was introduced to Thailand by Indian and Malaysian traders. Over the years, Thais have adapted these curries to their own tastes and available ingredients, resulting in a range of unique Thai curries, including the famous red curry used in Pad Prik Gaeng.

Particularities

Pad Prik Gaeng is distinguished by the use of thick red curry paste, which is spicier than the milder green curry, but less intense than the Panang or Massaman curry. This dish typically contains meat (such as chicken, pork, or beef), but can also be prepared with seafood or tofu. What makes this dish special is the way the curry paste is stir-fried, unlike more common curry dishes where the paste is cooked in coconut milk.

Taste profile

Pad Prik Gaeng is known for its deep, powerful flavors. The red curry paste provides a rich, spicy base with notes of garlic, shallots, lemongrass, and galangal. The heat of the chili peppers is often balanced by the sweetness of palm sugar and the salty depth of fish sauce. The addition of kaffir lime leaves and fresh Thai basil contributes to a refreshing citrusy undertone and aromatic depth.

Tips for preparation and serving

  • Balance in Taste: Ensure a good balance between sweet, salty, sour and spicy. Adjust the amount of curry paste to your own taste preference.
  • Fresh Ingredients: Use fresh herbs such as Thai basil and kaffir lime leaves for an authentic taste.
  • Meat choice: Chicken or pork are popular choices, but for faster preparation or a vegetarian version, tofu can be a good substitute.
  • Accommodation: Serve it with a portion of fragrant jasmine rice to offset the spiciness of the curry.
  • Garnish: Garnish with fresh herbs and possibly a lime wedge to freshen the flavors.

The dish tastes great with rice and you can add a fried egg as a topping.

The ingredients consist of:

  • garlic, finely chopped
  • red curry
  • pork, thinly sliced (or chicken)
  • green beans
  • lime leaves
  • water
  • chili pepper (if you like spicy)
  • fish sauce
  • possibly some sugar

You can buy the red curry ready-made in the supermarket or Toko.

Delicious dishes. The picture does not really suit this dish, but as said, all variations are possible.
Always nice to know in Thai language.
    ผัดพริกขิง (เนื้อ)หมู / ไก่
phàd phrík khǐng (núua) mǒe: / kài
stir-fried pork(s) / chicken in red curry (khǐng = galangal)
And combined with steamed rice and fried egg (ข้าวสวย ไข่ดาว – khâaw sǒewaj – khái daaw)
A nice thing about the fried egg is the difference between the Thai way of frying an egg (the yolk is cooked, as shown in the picture) and the European way, the yolk is still soft. If you want to order khái daaw fried in the European (Farang) way, ask for khái daaw fà-ràng (ฝรั่ง)

      @Ronald, you're confusing the gingers a bit.

      ขิง = ginger
ข่า = galangal (as in Tom kha kai)
