Thai clear soup (Gang Jued)
A lesser known dish from Thai cuisine is Gang Jued (Tom Jued) or Thai clear soup. It is a light, healthy soup and above all a pick-me-up. Your Thai partner will probably make it for you if you are ill, to help you recover.
The soup smells of the fresh herbs used such as Thai coriander and Thai celery and tastes excellent. The basis of the soup is often a chicken broth and meat of your choice can be added. The vegetables in Gang Jued usually use Chinese cabbage (Pak Gad Kow) and some seaweed. There are of course also many variants such as with soft tofu (Tao Huu) or Gang Fak with pumpkin.
Other vegetables popular for Gang Jued include white radish (Hua Chai Tao), bitter gourd (Mara), cabbage (Ka Lam Plee), fresh sweet bamboo shoots (Nor Mai Wan), and dry Chinese bamboo shoots (Noch Mai Jeen). Furthermore, the ingredients of Gang Jued consist of glass noodles (Woon Sen) and Thai omelette (Kai), but variations are also possible. Every street stall has its own recipe.
Before serving, add coriander (Pak Chee), chopped spring onions (Ton Hom) and some Thai celery leaves (Kuen Chai). For the garlic lover, adding some fried garlic (Kratiem Jiew) makes the taste sublime.

Gang Jued is แกงจืด kaeng tsjuut (tones: middle, low). Kaeng is curry, curry or kari (India), more or less spicy and tsjuut means 'bland in taste'.
Tom Jued is ต้มจืด tom tsjuut (tones: descending, low). Tom is 'cooking, cooked'. At least this is the term in the north.
I often order it as a side dish with very spicy things.

You order that as a side dish? That soup is enough for me. That's eating and drinking together.
I found this clear soup with shrimps the best, but there is no arguing about taste.
There are so many variations to make this soup... one of my methods of preparation is to boil chicken legs and drain the stock (leave it overnight) so that the fat can easily be skimmed off... chicken meat
remove from the legs ( is cooked ) in the soup ... add parsley / coriander and cut into slices
haw chi thea to … 2 x chicken stock cubes flavor enhancing and lette onion ..a few cloves of garlic and half a thumb of ginger cut very small…to taste and need, some legumes and mushrooms.

Gueng Chud is very famous in Thai cuisine. When the Thai goes to eat, he always orders THREE dishes, including often Gueng Chud.
The table must be full and people eat each other's dishes.
After payment, people remain seated for a while and the table may not be cleared immediately. This is to prevent someone you know who comes in later from thinking that things are no longer the case.
