Massaman curry is a delicious and aromatic dish that originated in Thailand. It is known for its unique flavor profile, combining savory, spicy and sweet flavors in perfect harmony. Massaman curry has a rich history and is a result of cultural influences from India, Malaysia and other Southeast Asian countries. The name "Massaman" is derived from the Malay word "Masam", meaning sour, and the Thai word "Man", meaning "cooked". This refers to the fact that the curry has a slightly sour taste. Traditionally, Massaman curry is made with herbs and spices such as coriander seeds, cumin, cardamom, cinnamon, cloves, nutmeg and star anise. These are mixed with chili peppers, shallots, garlic and shrimp paste for a flavorful base.

What makes Massaman curry really special is the use of ingredients such as potatoes, onions and peanuts, which give the dish a unique texture and flavour. Often it is also prepared with meat such as beef, chicken or lamb, although vegetarian and vegan variants are also available today. The curry is usually served with rice or noodles.

Massaman curry is popular worldwide these days and can be found in many Thai and Asian restaurants. It is also possible to purchase Massaman curry paste and spice blends from specialty stores and online. These can be used to make your own Massaman curry at home and enjoy the flavors of this delicious dish.

A number of well-known dishes from Thai cuisine are the various curries. There are five (plus several variations).

  • Green curry – 'gaeng kiow wahn', which tastes sharp and spicy.
  • Red curry – 'gaeng phet' sharper and spicier, but also more earthy and smoky than the green curry.
  • Yellow curry – 'gaeng leuang' sharp and spicy with a curry flavour.
  • Penang curry – 'gaeng phanaeng' the taste of this brown curry is sharp, round and nutty.
  • massaman curry – 'gaeng massaman' this orange-brown curry tastes mild, sweet and sour and spicy because of the spices.

Personally, I prefer the Massaman curry which is also available in several variations. The Thai call it Kang (Gaeng) Massaman. In Hua Hin I regularly bought Massaman curry according to a recipe from the south at a food stall Thailand. By the way, I was told that this delicious curry also originates from the south of Thailand. Many Muslims live in this region. The name is therefore a corruption of the word 'Musulman', or 'Muslim'.

If you don't have the time or feel like making the Massaman curry yourself, there is a great alternative. The curry is also available as a paste at almost every Toko. You then only have to make the pasta and add the other ingredients such as potato and chicken.
