In a few weeks I will leave with my wife and (adult) child on holiday to Thailand for a period of about 50 days. For this period I need to apply for a tourist visa at the Thai embassy in Brussels.

I have been married to a Thai for 24 years and we have our own house over there. I wonder why on earth we have the document “1 copy of a confirmed hotel reservation OR an invitation letter/mail from a person in Thailand with a full address and 1 copy of this person's identity card + proof that this person lives in Thailand” must present when applying for a visa.

A “Tourist visa” is of course primarily intended for tourists. Because they want to know where those tourists intend to stay, they are also asked to provide proof of their residence in Thailand.
In Belgium people ask for a proof of address, in the Netherlands a travel plan, nowhere else nothing at all... everyone has their own rules.

Whether that is right that people ask this or not is not really important. It is the embassy/consulate that decides which forms you need to submit. It is not now because this visa now coincidentally meets your period of residence, and you are married, that people will suddenly deviate from those requirements.
By the way, you better ask this question to the embassy itself. They demand this proof.

But you say you are married and have your own house. Make a copy of your Tambien Job, or your wife's, and that should suffice. If you don't have that, ask the resident of your house to send a copy of her/his Tambien Baan and you're done. Nothing to worry about anyway.
