I am going to apply for a Category 2 Non O Visa to visit relatives in Thailand.
2. Visit or stay with family living in Thailand (more than 60 days) single entry.
There is no insurance requirement on the website of the Thai Embassy, but I know that the website where the visa must be applied for https://www.thaievisa.go.th/ does not have quite the same requirements as stated on the website of the Thai Embassy.
Are there any of us who have applied for this visa in the last few months and can tell me if they had to upload proof of insurance?

Normally you only have to meet the conditions stated on the embassy link. That should suffice. What is on the thaie visa is often old and outdated.

Dear Rudolf, I was quite busy last June with the application Non Imm O. If you clearly tick at the beginning of the entry fields of the online process that it concerns family visits, you will not be asked to upload insurance papers.

You can also get it in a Single entry version.

I have the marriage certificate myself (I need it anyway for BKK) a written letter from my wife that we are still married, copy of her Tambien Baan and her Thai ID, and another written invitation letter, that should be enough proof , lol.

To apply for a Non-immigrant O Thai Marriage visa in the Netherlands, it is sufficient to provide proof that the marriage was registered in the Netherlands.
To extend the period of residence, the marriage must also be registered in Thailand.
You will then obtain a Kor Ror 22 which is required for the renewal

EUR 175 for multiple entry (1 year validity)

This is simply the Non-immigrant O Thai Marriage Single or Multiple entry visa.
When applying for the visa, you must provide proof that you are married to a Thai. Not that you got married in Thailand.
To extend your period of residence as a Thai Marriage in Thailand, your marriage must be registered in Thailand, because you need a Kor Ror 22 for that extension.
