Visa for Thai during stopover in United Arab Emirates?

I am going to Thailand soon with my Thai girlfriend, who has a Dutch residence permit but no Dutch passport. We are considering a stopover of a few days in Dubai and/or Abu Dhabi. As a Dutch citizen, I do not need a visa for that, but as far as I can tell, my Thai girlfriend does.

I fly to Thailand with Qatar on Thursday and have a 2,5 hour stopover in Doha. Now I read from several people that the stopover takes much longer for unknown reasons. This morning I read that someone had been waiting for 16 hours and another 6 hours.

I want to fly to Vietnam via Bangkok soon. Can you tell me if this is possible if I have a transfer within 24 hours? Or do I still have to quarantine (one night) in Bangkok? Do I have to clear my luggage or can I label it if I have a confirmed reservation? Can I fly even if the color code of both countries remains orange?

I read with interest that on a flight between Bangkok and Amsterdam with a transfer to Dubai or Abu Dhabi, people stay in a hotel for a few days before flying on. But how do you arrange that? Can you indicate this somewhere when you book via the internet? I do see flights with a layover of 3 or 4 hours, but how do you arrange it if you want to stay in Dubai or Abu Dhabi for a few days?
