Of course we all know Tom Yum Goong, Phat Kaphrao, Pad Thai and Som Tam, but Thai cuisine has more dishes that will put your taste buds in a state of delight. Many of these dishes of Thai cuisine can be found in the regions. An example of this is Khao Soi (Northern Thai curry noodles).
TasteAtlas, a kind of food and cuisine atlas, describes, catalogs and promotes the eating of local dishes and authentic restaurants. According to the authors of 'TasteAtlas', the northern Thai 'Khao Soi' is the best soup in the world.

If we are to believe Wikipedia – and who wouldn't? – are noodles “…consumables made from unleavened dough and cooked in water,” which, according to the same infallible encyclopaedic source, “has traditionally been one of the staple foods in many Asian countries.” I couldn't have phrased it better were it not for the fact that this definition does a gross injustice to the delicious noodle paradise that is Thailand.
