Khao soi kai (with chicken and coconut milk)

The choice of meat, seafood or tofu as a protein source also makes the soups suitable for different eating habits and preferences.

Moreover, Thai noodle soup culture is closely intertwined with the daily life of the local population. Noodle soup stalls and small eateries are widespread and it is not uncommon to see people enjoying a steaming bowl of noodles at any time of the day.

Well-known Thai noodle soups are Khao soi, Khao soi Mae Sai (with pork) and Khao soi kai (with chicken and coconut milk). A lot of noodle soup is sold through street stalls and food courts. In addition to the rice or egg noodles, meat, chicken or tofu is added. Also characteristic are the fish or beef balls, the whole is finished with herbs and sprinkled with some coriander leaves.

You can adjust the taste yourself with sugar, nam pla (fish sauce), dried chili pepper and vinegar. Unlike most other Thai dishes, noodles are eaten with chopsticks.
